Standing Rib Roast
This easy recipe for Standing Rib Roast is a favorite of mine
for entertaining. The garlic, pepper and Italian Seasoning add
depth of flavor to the meat, it is so delicious.
It pairs well with
roasted potatoes
or
baked mashed potatoes
and tasty
sauteed green beans.
A terrific meal for a small gathering of friends or family.
Don't forget dessert. How about a
Chocolate Cake.
Standing Rib Roast
Seasoning Mix: 1 Tbsp black pepper 1 Tbsp garlic powder 1 Tbsp kosher salt 2 Tbsp Italian Seasoning mix
Liquids: 1/2 cup red wine 1 cup beef broth
Slice 2 garlic cloves into 4 or 5 pieces. Randomly cut slits along the top of roast, about 1-2 inches deep. Press garlic into the slits.Mix dry seasonings. Coat roast with olive oil. Place dry seasoning mix all over, except the bottom. Allow roast to stand at room temperature for 1 hour.After 1 hour, turn oven to 325 degrees.
Place rib side down, in a roasting pan. Add the beef broth & red wine. Cook for approximately 1 3/4 hours to 2 hours. About 27 minutes per pound for medium-rare. Internal temperature should be 145 degrees. Place roast on carving board, cover with foil for 20 minutes. This allows time for juices to re-distribute. The temperature will rise 5-10 degree while resting.
Carefully strain liquid into sauce pan, simmer until ready to drizzle over meat.
Slice and serve. Your guests who like medium-well, give them the end pieces, save the middle for the medium-rare fans.
Yields 6-8 servings

Cook's Note:
Always important to let roast come to room temperature.
Cooking right from the refrigerator does not produce desired
results. This roast is beautiful when it comes out of the
oven, a nice brown crust and full of flavor.
Sauteed Mushrooms
are great with this roast. When roast is
resting saute mushrooms.....a great compliment for the meat.
