Sauteed Peppers

The smell and aroma of sauteed peppers cooking on the stove, reminds me of walking into a pizza parlor. It just makes your mouth water thinking about how wonderful they taste.

Peppers offer many options with your favorite main course meals. Add them to soups or stew, a must with fajitas or serve them alone as a tasty side dish. This easy recipe is so delicious and very colorful.


You can serve this along side a juicy grilled chicken breast or in a salad and anything in between......you will use this one again!

Green, Red & Yellow Peppers

1 each green, red & yellow pepper
2 tbs olive oil
2 tbs butter
Salt & pepper to taste

  • Wash and seed peppers. To seed peppers,
    cut in half, pull seeds & stem from pepper.
    Slice into 1 inch strips.
  • Place large saute pan on stove top, turn
    to high heat. Add the olive oil. When begins
    to ripple, add the butter. When melted add
    peppers. Stir to coat.
  • Let rest a few minutes, until starting to
    brown. Flip or stir with wooden spoon several
    times. Season with salt & pepper.
  • Cook until tender, yet crisp. About 5-8 minutes.

    Variations:
  • Use any combinations of peppers. Add a red
    or yellow sweet onion.
  • Add minced garlic and an Italian seasoning blend,
    together they enhance this dish.
  • Leftover sauteed peppers are great in scrambled
    eggs or with fried potatoes.
  • Using the same techniques & ingredients, try with
    just ONIONS; add garlic and herbs, equally wonderful.
