Sauteed Green Beans
This easy recipe for sauteed green beans is tasty and a great
alternative to the typical green bean casserole we have during the holidays.
Green beans by themselves can be bland and a bit boring. Sprucing them up with olive oil, butter and shallots is a crowd pleaser every time. The bonus, very easy to prepare.
And, they go great with many of your favorite main course meals. From fried chicken to pork roast and anything in between, give this a try....you will love them!
Green Beans with Shallots
1 pound fresh green beans
1-2 shallots
1 tbs olive oil
2-3 tbs butter
Salt & Pepper
Cut the stem end of the green beans,
cut in half. Rinse green beans with cold water, place on paper towels to absorb excess water.
Peel and slice shallots, separate.
Place large saute pan on stove top, set to
medium-high heat. Add the olive oil. When oil begins to ripple, add butter, give a stir, add shallots, sauté for 2 minutes.
Add green beans, toss with tongs in the pan to
coat the green beans. Let set for 3-4 minutes.
Season with salt and pepper, to taste.
Toss with tongs again; do this a few times for
the next 5-6 minutes.
Serve Immediately. Yields 6 servings.
Variations:
Use a flavored olive oil such as basil or garlic.
Add 1 or 2 minced gloves of garlic with shallots.
Can use frozen green beans, thaw and drain before
putting in hot oil, cooking time will vary.
Sauteed green beans are great with your favorite
herbs; dried basil, thyme & oregano are great choices.

Cook's Note: To shorten cook time - blanch fresh cut green beans in hot water for 2 minutes, drain, and prepare as directed above.
