Roasted Red Potatoes

Roasted red potatoes are super simple to make. This recipe uses a roasting technique that produces a crispy outside and tender inside. The garlic and rosemary add to the dish........the aroma is fantastic when these are cooking.

Potatoes are great....fried, baked, mashed, au gratin and scalloped. They are used in soups, stews and casseroles. Potatoes are one of those yummy foods everyone loves.....and everyone has a favorite recipe.

Roasted Red Potatoes
with Garlic & Rosemary

3 lbs small red potatoes
3 gloves garlic
1 tbs fresh rosemary
Olive Oil
1 tsp Kosher Salt
1/2 tsp pepper

  • Set oven to 425 degrees. Rinse potatoes.
    Cut into 4 pieces or bite size. Place in bowl.
  • Coat with Olive Oil, about 2-3 tbs. Season
    with salt & pepper. Spread potatoes on
    a 13 x 9 sheet pan. Place in oven set timer for
    40 minutes.
  • When timer goes off, leave potatoes in oven.
    Dice garlic & remove the leaves off rosemary stem,
    finely chop. Remove potatoes from oven, sprinkle
    with garlic & rosemary. Carefully stir to mix ingredients.
    Return potatoes to oven, cook another 5-7 minutes.
  • Yields 6 servings.

    Variations:

  • Use can use diced garlic from a jar, or use 1 tsp garlic powder, added at the beginning of the cook cycle. No fresh rosemary on hand, use 1/2 tsp dried rosemary.
  • Want a little pizzazz......add chile powder, fantastic.
  • Don't like rosemary, don't add it, but add garlic, yummy!

  • Serve Roasted Red Potatoes with a Beef Tenderloin.
