Roasted Potatoes Yukon Gold
Roasted potatoes are fantastic. This recipe uses a roasting technique that produces a potato that has a crispy outside and tender inside. Add some onions and you have one tasty dish.
Potatoes are so versatile. From baked to fried, au gratin to scalloped, the choices are endless. The Yukon Gold gets its name from the yellowish color on the inside of the potato. This type of potato works well with most recipes calling for a white potato.
This recipe is simple & tasty; your guests will be pleased.
Roasted Yukon Gold Potatoes with Sweet Onions
3 lbs small Yukon Gold potatoes
1 cup diced sweet onions
Olive Oil
1 tsp Kosher Salt
1/2 tsp pepper
Set oven to 425 degrees. Rinse potatoes. Cut into 4 pieces. Place in bowl. Coat with Olive Oil, about 2-3 tbs. Season with salt & pepper.
Spread potatoes on a 13 x 9 sheet pan. Place in oven set timer for 40 minutes.
When timer goes off, leave potatoes in oven. Dice onion into bite size pieces. Remove potatoes from oven. Mix onions with potatoes. Drizzle additional olive oil if needed. Return potatoes to oven cook 8-10 minutes to allow onions to cook.
Yields 6 Servings.
These pairs well with a roasted chicken or
seared pork loin chops.
Variations:
Any onion will work, red, white or sweet.
Want a little pizzazz, add 1 tsp chile powder, yummy!
Small white potatoes work equally well.
