Pork Carnitas: Sweet & Spicy

This easy recipe for Pork Carnitas is fantastic. The combination of ingredients gives a spicy, yet sweet flavor to the meat. Wonderful
alone or shred meat for tacos.

Some recipes cook the pork in lard, however I stay on the healthier
side with this recipe. Like all braising recipes, this cooks slowly and
the meat is so tender
and full of flavor.

Your guests will be impressed with this one!

Yummy Carnitas!

3 pounds lean boneless pork ribs
1 tsp each:
garlic powder & onion powder
kosher salt & pepper
paprika & cumin
Mexican oregano
chipotle chile powder
2 tbs olive oil
1 cup red enchilada sauce
2 cups chicken stock
1/3 cup diced jalapeno peppers
1 large onion cut into 8 pieces
1 small orange
1/2 can cola
Flour Tortilla Shells or crunchy taco shells

  • Trim fat, cut meat into 2 inch cubes.
    Place in plastic bag.
  • Mix all dry ingredients. Mix with pork,
    refrigerate 1 hour.
  • Set meat out for 30 minutes. Heat oil in
Dutch Oven on stove, medium-high heat.
    Sear meat in batches.

  • Turn heat to low. Add the chicken stock,
enchilada sauce, diced jalapeno peppers, onions,
and squeeze juice from orange, place in pan.
Cook 1 1/2 hours. Stir occasionally.
  • Add the cola, simmer 30 minutes. Ready to serve!
  • Shred for tacos or serve as is. Mexican rice and
black beans are a wonderful complement to this dish.
