Mixed Greens Salad

This easy recipe for mixed greens salad is served with a red wine vinegar dressing. The peppers add a little spice and the feta adds a slightly salty finish to this wonderful dish.

This is prepared with a variety of vegetables and full of delicious flavors. Fantastic with grilled shrimp or sauteed scallops.




Fancy Lettuce Salad with
Peperoncine Peppers & Feta

2 - 7 oz pkg red, green & romaine mix lettuce
8 Peperoncini Peppers
1 cup feta cheese crumbles
1/2 large cucumber thinly sliced
1/2 red onion thinly sliced
1 green pepper, seeded & diced
14 oz can artichoke hearts, drained
1 vine ripe tomato, diced

Dressing:
1/2 cup olive oil
1/4 cup red wine vinegar
Juice from 1/2 lemon
1/2 tsp oregano
Salt & Pepper

  • Place lettuce on serving platter.
    Arrange cucumbers, onions, green peppers,
    artichoke hearts & feta crumbles over lettuce.
  • Whisk olive oil, vinegar, lemon juice,
    oregano and salt & pepper to taste.
    Pour over salad. Arrange Peperoncini
    Peppers around platter.

  • Yields 6 servings.

    Variation: Try with rice wine vinegar. Add
    whole black or green olives. Can't find
    artichoke hearts, just as tasty without them!
