Grilled Shrimp Skewers
This easy recipe for grilled shrimp skewers is delicious with a
light lemon garlic sauce. The options are endless with this
seafood delight. From amazing shrimp cocktail to scampi and
everything in between, a versatile and delicious seafood. You will enjoy this recipe using your grill.
Serve at a cocktail party as an appetizer or as the main
entree. Try with a
mixed greens salad
or use in an orzo salad.
Grilled Shrimp
Skewers with Lemon Garlic Sauce
18 large shrimp, peeled & deveined, tails on
6 Bamboo skewers
1/2 cup butter
2 garlic cloves minced
1 tbs fresh lemon juice
zest from 1/2 lemon
1/2 tsp salt
1/4 tsp white pepper
2 tbs chopped flat-leaf parsley
Soak bamboo skewers in water for 30 minutes, prevents open ends from burning.
Melt butter in sauce pan on low heat, add garlic, lemon
juice and zest. Simmer 5 minutes. Stir in salt, pepper &
parsley. Turn off heat.
Thread 3 shrimp on each skewer, tails facing in one
direction, leave a little space between. Brush lemon butter
sauce on side you will place face down on grill. Cook 3
minutes. Brush sauce on side facing up, turn with tongs, cook 3 minutes. Remove from grill brush again with butter sauce....want the shrimp dripping in this sauce!
How simple was that? These are scrumptious!
Variations:
Try without lemon, add 1/2 tsp chile powder or 3-4 dashes hot pepper sauce.
Add 1 tsp onion powder to above recipe.
Use a dry rub mixture: 1/2 tsp chile powder, paprika, salt, pepper, onion & garlic powder. Lightly brush with olive oil to prevent sticking. Squeeze fresh lemon over shrimp when you take them off the grill.
Cook's Note: Do
not over cook shrimp, they will be chewy. They are done when they turn pink and opaque in the middle. See notes at
