Chicken Marsala

This Chicken Marsala easy recipe is prepared with Marsala wine, chicken broth, shallots and mushrooms. The combination of flavors is wonderful. Quick and simple with a gourmet appeal.

You can buy this type of wine sweet or dry, either will work but sweet adds a nice balance to the shallots. Marsala wine is a popular cooking ingredient in many Italian dishes. Replace chicken with veal and you have a traditional Italian dish, Veal Marsala.

I like to serve this with roasted potatoes and mixed greens salad. When you serve this to your dinner guests they will think you spent hours preparing this dish. You will know it only took you 60 minutes, from start to finish, making this delicious delight!


Chicken Marsala with
Crimini Mushrooms

4 - 6 oz chicken breast
salt & pepper for chicken
8 oz pkg crimini mushrooms sliced
3/4 cup Marsala Wine
1 cup chicken broth
1 shallot, diced
1/2 cup flour
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp pepper
1 tsp salt
1 tbs Italian Seasoning
2 tbs olive oil
4 tbs butter
1/3 cup chopped flat-leaf parsley

  • Cut chicken breast in half. Place on cutting
    board between two pieces of plastic wrap,
    and pound thin to about 1/4 inch. Do this
    in batches. Season with salt & pepper.
  • Place flour in shallow dish, add seasonings,
    mix well. Lightly flour chicken breast.
  • Heat olive oil in large saute pan on medium-high
    heat, don't let it smoke, add 1 tbs butter. In
    batches, fry chicken breast 3 minutes per side.
    Place on serving platter, tent with
    foil to keep warm.
  • Turn heat to medium, add 2 tbs butter with
    shallots and mushrooms. Cook, stir frequently,
    until mushrooms are golden brown, about
    5-6 minutes. Add Marsala wine,turn to
    high heat bring to boil, stir with wooden
    spoon to scrap all the brown bits
    off the bottom of the pan.
  • When wine has reduced by half, add chicken
    stock and cook 3-4 minutes or until sauce has
    thickened a bit. Add half of the parsley & return
    chicken to pan. Lower heat to medium, add
    remaining butter and cook 5 minutes.
  • Place 2 chicken breast on plate & pour mushroom
    sauce over chicken. Garnish with parsley
