I love potatoes, they go with everything. They can be prepared in so many different ways; from fried and baked to mashed and boiled. All equally tasty.
Potatoes come in many varieties; from red and white to russet and sweet, to name a few. Yukon Gold is the potato of choice for this wonderful Baked Mashed Potato recipe.
Baked Mashed Potatoes with Gouda Cheese
3 pounds Yukon Gold Potatoes
Salt & Pepper
1 cup milk
1/2 stick unsalted butter
1 1/2 cups shredded Gouda Cheese
1/2 cup bread crumbs + 1 tbs butter
Fill large stock pot with cold water. Peel potatoes, cut into quarters, place in stock pot, turn stove to high heat. Boil until fork tender, about 10-12 minutes.
In a small sauce pan, simmer milk & butter while potatoes boil. Heat oven to 350 degrees and lightly grease a 13 x 9 glass or ceramic baking dish.
Drain potatoes in colander, return potatoes to pan, slowly pour half the milk/butter mixture over potatoes. With a potato masher, work milk into potatoes. Salt/Pepper to taste. Add additional milk until smooth and creamy. You will be adding cheese so make sure the potatoes are real creamy. A few lumps are great!!
Mix in cheese. Start with 1 cup, give it a taste, add more to your liking. Transfer potatoes to baking dish. Melt 1 tbs butter in microwave safe bowl on low heat, mix in bread crumbs. Sprinkle over potatoes. Bake 20-25 minutes until bread crumbs begin to brown.
