Spicy Caesar Dressing
with Grilled Romaine




Kick it up a notch with a Spicy Caesar Dressing served on grilled romaine. Simple, quick and delicious; with just the right amount of spice.

3 tbs mayonnaise
1 tbs Dijon mustard
2 tsp Worcestershire sauce
2 tbs red wine vinegar
1/4 small red onion, coarsely chopped
6 cloves roasted garlic
1 chipotle pepper in adobo
2 dashes hot sauce
3 anchovy fillets
Juice from 1/2 large lemon
1 - 2 tbs honey
Salt & fresh ground black pepper
1/2 cup canola oil, plus more bro grilling romaine
1/4 cup parmesan cheese
1 large head romaine lettuce, cut in half

  • Clean 6 cloves garlic, drizzle with olive oil, place
    on baking sheet w/foil & roast in a 450 degree oven
    for 20 minutes or until golden brown.
  • Place mayonnaise, mustard, Worcestershire, onion, garlic, anchovies, chipotle pepper, honey, hot sauce, salt & pepper in blender, pulse until blended. Slowly add in olive oil, then vinegar, if too thick add a little water
  • Heat grill for 5 minutes, brush romaine with oil, season with salt & pepper; place on grill cut-side down and grill for 30-40 seconds or until slightly charred. Arrange lettuce on large platter, drizzle with dressing and garnish with shaved parmesan cheese.


  • This is amazing. You can also serve the dressing with a regular Caesar salad and croutons.
