Roasted Tomatillo Salsa

The Roasted Tomatillo Salsa recipe is amazing. The jalapenos, garlic, onion and cilantro finish off the tasty salsa.

1 1/4 pound tomatillos
2 large jalapeno pepper
1 large sweet onion
4 large garlic cloves
3/4 cup cilantro leaves
2 tbsp Extra Virgin Olive Oil
1 Small Lime

  • Preheat oven to 475 degrees. Line a 15 x 10 baking sheet with foil.
  • Remove husk from tomatillos and rinse well, there is a sticky substance on them. Cut into quarters, place in large bowl. Clean onion and cut in half, cut each half down the middle of the onion and cut into 6 pieces, add to bowl.

  • Wear plastic gloves when working with jalapenos, cut stem off peppers, cut into quarters, and remove seeds from one pepper, add to bowl. Clean garlic cloves, leave whole and add to bowl. Drizzle 2 tbsp olive oil over veggies, stir to coat and pour onto foil lined baking sheet.
  • Roast for 15 minutes. Remove from oven and let rest 30 minutes. Clean cilantro and remove leaves from stem, need 3/4 cup. Add the juice of 1 small lime. Place all ingredients into food processor and pulse until well blended.


  • Serve with fish tacos, or with grilled swordfish or you can enjoy this wonderful salsa with your favorite tortilla chips.
