Potatoes and Onions

Fried potatoes and onions are delicious. Not just for breakfast, these potatoes are perfect with steaks, chops or chicken. Golden brown and full of flavor.

Ingredients:
5 medium russet potatoes, cooked and cooled
1/2 medium sweet onion
1 garlic clove minced
1 tsp black pepper
1 tsp kosher salt
1/2 tsp paprika
1/2 tsp garlic powder
2 tbsp vegetable oil

  • Fill a medium sauce pan with cold water, add potatoes and boil until fork tender. Drain water and cool potatoes in the refrigerator for 2 hours.
  • Cube potatoes and dice the onion. Heat a large saute pan over medium heat with the vegetable oil. When oil is hot, add the potatoes, cook 5-7 minutes stirring a few times. Add the onions and cook another 5-7 minutes. Looking for golden brown edges. Add the seasonings including garlic, mix well and cook another 5 minutes or until evenly browned.
