Pork Roast with Mushroom Wine Sauce
3 - 3 1/2 pound bone-in roast
1 1/2 tablespoons Kosher Salt
1 1/2 Fresh ground pepper
4 garlic cloves
1 teaspoon fresh chopped basil
1 teaspoon fresh chopped oregano
3 - 4 tablespoons olive oil
Wine Sauce:
1/2 cup red wine
1/2 cup beef broth
2 tablespoons butter
8 oz pkg sliced crimini mushrooms
Kosher Salt
Fresh Ground Pepper
Preheat oven 425 degrees.
Place a roasting pan or large oven safe deep skillet over medium-high heat. Drizzle 2 tablespoons olive oil and heat. Season pork with salt and pepper, massage all over meat. Place in pan, sear all side until golden brown, about 2 minutes per side.
Chop garlic very fine, chop basil & oregano mix with 1 tablespoon of olive. Remove meat from heat and carefully rub the mixture over the meat. Place in oven for 45 to 50 minutes. Check temperature, 140 degrees roast in done. Remove from oven. Place on serving platter, tent with foil. Meat will continue to cook. Rest 15 minutes.
Place pan back on stove add butter and mushrooms, saute for 5 minutes. Pan will be very hot, do not turn heat on until ready to add liquid. Turn heat to medium, add red wine & beef broth, stir for 1 minute to incorporate pan juices, reduce heat to low, and season with salt & pepper, simmer 5 minutes.
Slice roast and drizzle with mushroom sauce.
