Roasted Peppers and Onions

This easy recipe for peppers and onions uses red, green and orange bell peppers with sweet onions for a delicious side dish. The veggies are crisp yet tender.

Seasoned with salt and pepper and a little olive oil and you have a tasty healthy side dish to serve with your favorite steak, chicken or pork dish.


Ingredients:
1 each: red, green & orange bell pepper seeded
cut into 1 1/2 inch pieces.
1 large sweet onion cut into 1 1/2 inch pieces
Olive Oil
Kosher Salt
Fresh Ground Pepper to taste
Foil lined baking sheet

  • Preheat oven to 400 degrees. Arrange
    vegetables on the baking sheet, drizzle
    with olive oil. Season with salt & pepper.
    Toss with your hands to mix. Roast in the
    oven for 20 - 25 minutes or until just turning
    brown on the edges.
  • Remove from oven, with a slotted spoon,
    place veggies in a serving bowl, season with
    additional salt & pepper to taste. Serve immediately.


  • They are delicious and perfectly roasted.
