Roasted Peppers and Onions
This easy recipe for peppers and onions uses red, green and orange bell peppers with sweet onions for a delicious side dish. The veggies are crisp yet tender.
Seasoned with salt and pepper and a little olive oil and you have a tasty healthy side dish to serve with your favorite steak, chicken or pork dish.
Ingredients:
1 each: red, green & orange bell pepper seeded cut into 1 1/2 inch pieces.
1 large sweet onion cut into 1 1/2 inch pieces
Olive Oil
Kosher Salt
Fresh Ground Pepper to taste
Foil lined baking sheet
Preheat oven to 400 degrees. Arrange
vegetables on the baking sheet, drizzle with olive oil. Season with salt & pepper. Toss with your hands to mix. Roast in the oven for 20 - 25 minutes or until just turning brown on the edges.
Remove from oven, with a slotted spoon, place veggies in a serving bowl, season with additional salt & pepper to taste. Serve immediately.
They are delicious and perfectly roasted.
