Macaroni Salad

This easy Macaroni Salad recipe uses medium shell shaped pasta for a creamy simple salad for your next party or pot-luck dinner.

A delightful combination of celery, onions, peas and sweet relish. You can use any pasta type shell you have on hand, try spiral shaped pasta or elbow macaroni.

6 cups cooked medium size shell macaroni
5 hard boiled eggs, diced
1 cup canned peas
1 cup diced celery
1 cup diced onions
1/4 cup sweet pickle relish

Sauce:
2 cups miracle whip
2 tbs yellow mustard
1 - 2 tbs white vinegar
2 - 4 tbs milk
1 tbs black pepper
2 tsp kosher salt

  • Cook macaroni according to package directions, al le dente. Drain and chill is ice water to stop cooking.

  • Mix the sauce. In a large mixing bowl, add macaroni, veggies and pour salad dressing over macaroni. You want a creamy texture with a nice tangy flavor. Add additional miracle whip, milk and vinegar if needed.

  • A delicious and flavorful salad. If you like cheese, add small diced cubes of cheddar cheese, add before serving.
