Ingredient Substitutions

Ingredient Substitutions will help you when you don't have a specific ingredient and you need to know what else to use; this list is here to the rescue. I can't tell you the number of times I got the urge to cook something, at the last minute, to learn I did not have a specific ingredient.

After much research and experimenting, I created this list to help in emergency situations, keep it near by, you never know when you will need it!.

Ingredient Substitutions Chart
Ingredient Amount Substitute
Allspice 1 teaspoons 1/2 tsp cinnamon & 1/2 tsp ground cloves
Baking Powder 1 teaspoons 1/3 tsp baking soda & 1/2 tsp cream of tartar
Bay leaf 1 whole 1/4 tsp crushed
Broth, beef or chicken 1 cup 1 bouillon cube dissolved in 1 cup boiling water
Buttermilk (sour milk) 1 cup 1 cup milk plus 1 tbs lemon juice or white vinegar
Chives, finely chopped 2 tsp 2 tsp green onion tops, finely chopped
Coconut cream 1 cup 1 cup whipping cream
Cornmeal, self-rising 1 cup 7/8 cups plain, 1 1/2 bs baking powder, & 1/2 tsp salt
Cornstarch (for thickening) 1 tbsp 2 tbsp all-purpose flour
Cream, light 1 cup 1 cup evaporated milk, undiluted
Cream, whipped 1 cup Chill a 13-oz can evaporated milk until ice crystals form. Add 1 tsp lemon juice. Whip until stiff>
Flour, all-purpose (for thickening) 1 tbsp 1 1/2 tsp cornstarch or 1 tbsp granular tapioca
Flour, all-purpose 1 cup 1 cup plus 2 tbsp cake flour
Flour, self-rising 1 cup 1 cup minus 2 tbsp sifted all-purpose flour
Garlic 1 clove, small 1/8 tsp garlic powder
Herb, fresh 1 tbsp chopped 1/2 tsp dried crushed herbs
Horseradish 1 tbsp 2 tbsp bottled fresh
Ketchup 1 cup 1 cup tomato sauce, 1/4 cup brown sugar & 2 tbsp white vinegar
Lemon peel, dried 1 tsp 2 tsp grated fresh lemon peel
Lime 1 medium 2 tbsp juice
Mayonnaise (salad dressing) 1 cup 1/2 cup yogurt & 1/2 cup mayo
Milk, buttermilk (or sour) 1 cup 1 cup plain yogurt
Milk, sweetened condensed 1 can Heat until melted: 1/3 cup + 2tbsp evaporated milk, 1 cup sugar & 3 tbsp butter
Mustard, dry 1 tsp 1 tbsp prepared mustard
Onions 1 pound 3 large onions
Onion Powder 1 tbsp 4 tbsp fresh chopped onion
Orange peel, dried 2 tsp 1 tsp orange extract
Parsley, dried 1 tsp 3 tsp fresh chopped parsley
Peppers, green bell 1 tbsp dried 3 tbsp green pepper, chopped
Peppers, red bell t tbsp dried 3 tbsp fresh red pepper, chopped, or 2 tbsp chopped pimiento
Peppermint, dried 1 tbsp 1/4 cup chopped fresh mint
Pimiento 2 tbsp 3 tbsp fresh red bell pepper, chopped
Pumpkin pie spice 1 tsp 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp allspice, & 1/8 tsp nutmeg
Sour Cream, cultured 1 cup 1 cup yogurt
Spearmint, dried 1 tbsp 1/4 cup chopped fresh mint
Sugar, brown 1 pound 2 1/4 cup firmly packed
Sugar, granulated 1 pound 2 1/4 cup
Sugar, powdered 1 pound 2 3/4 cup
Tapioca, granular 1 tbsp 2 tbsp pearl tapioca
Tomato Juice 1 cup 1/2 cup tomato sauce & 1/2 water
Worcestershire sauce 1 tsp 1 tsp bottled steak sauce
Yogurt, plain 1 cup 1 cup sour cream, or buttermilk
