Iceberg Lettuce Salads
Iceberg lettuce salads are crsip and fresh. A versital
vegetable for many different types of salads. The Wedge with blue cheese or Chopped with diced tomatoes and bacon are easy to
prepare.
Having dinner guests and your not sure if everyone likes blue cheese dressing, serve both of these. In about 15 minutes you can have two great salads. The Wedge pairs well with seafood and the Chopped pairs well with grilled chicken or steak. Enjoy.
Iceberg Wedge Salad with Blue Cheese Dressing
1 Head Iceberg Lettuce, firm
1 Roma tomato
4 Green onions
Salt & Pepper
Blue Cheese Dressing
Blue Cheese Crumbles
Core, rinse, drain lettuce. Dice tomato and
green onions. Cut lettuce in quarters. Place wedge on salad plate. Pour 1/3 cup blue cheese dressing over wedge, 1/4 of the tomatoes and onions, sprinkle with blue cheese crumbles. Salt & Pepper to taste.
Yeilds 4 servings.
Chopped Salad
1 head Iceberg Lettuce
1 large tomato diced
1 English cucumber diced
1/2 red onion
3 Stalks celery
6 large radishes diced
1/2 diced green pepper
6 slices crisp bacon
1 Cup Grated Cheddar Cheese
Dressing:
3/4 cup olive oil
Juice of 1 lemon
2 tbs garlic red wine vinegar
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp salt
1 tsp pepper
Cook bacon, crisp. Core, rinse & drain
lettuce. Dice tomato, cucumber, red onion, celery, radishes & green pepper.
Cut lettuce in half, half again and thinly slice each
quarter. Place in large serving bowl, top with all the
diced vegetables.
Whisk together dressing ingredients, pour over lettuce,
toss together. Top with grated cheddar cheese
Yields 6 - 8 servings.
