Homemade Hash Browns

Homemade Hash Browns are made with russet potatoes and cooked to a crispy golden brown. Seasoned with green onions and garlic powder for a tasty treat.

Perfect with your favorite breakfast eggs, brunch or fantastic with dinner. Many recipes use raw potatoes, but I prefer to use cooked potatoes.

Ingredients:
3 pounds russet potatoes, boiled & cooled
6 - 8 green onions, chopped with greens
1 - 2 garlic cloves, minced
1 - 2 tbsp vegetable oil
2 tbsp butter, room temperature
1 - 2 tsp black pepper
1 - 2 tsp Kosher Salt
1 - 2 tsp Kosher Salt

  • Cook potatoes with skin on. Leave whole, when you cut them in half the potatoes absorb to much water. Cook until fork tender, drain and cool in the refrigerator until completely cooled.
  • When potatoes are cool, using a vegetable grater, grate all potatoes, leave skin on and discard after grating, you only want a few pieces of the skin. Set aside
  • Prepare green onions and garlic. Add to potatoes,
mix well. Heat 1 tablespoon each of vegetable oil
and butter in a large saute pan on medium heat.
When hot add all the potatoes, distribute evenly.
Season with half the salt and pepper. Cook 5-7 minutes.
  • Drizzle the remaining vegetable oil over top of
potatoes and spread the butter on the top. Turn
potatoes and cook another 5-7 minutes or until
golden brown. Keep turning potatoes until crispy
    and golden brown.

  • This recipe is easy and the hash browns are delicious! Serve with a Ham Egg Bake or your favorite grilled burger.
