Crazy Cake

Crazy Cake! I know the name is rather interesting; but this easy recipe is fantastic. The best part. . . .mixed and baked in the same pan. No electric mixer for this one, just a fork to mix this batter.

My Mom has been making this for years, not sure where she got this recipe but I have to tell you it is Crazy Good! Chocolate has never tasted so good.



The Cake

Cake mix:
3 cups sifted flour
2 cups sugar
6 tbs cocoa powder
2 tsp baking soda
1 tsp salt
3/4 cup Mazola
2 tbs white vinegar
2 tsp vanilla
2 cups cold water


  • Preheat oven to 350 degrees.
  • In an ungreased 13 x 9 metal pan sift
    flour, sugar, baking soda, salt & cocoa.
    Pour the oil, vinegar and vanilla over dry
    ingredients, followed by 2 cups of cold
    water. With a fork, mix thoroughly. Bake
    for 40-45 minutes. Test with toothpick
    for doneness.
  • Cool and frost with Crazy Icing!
    You had to see that coming, right?

    Crazy Icing:
    Cook until a thick like paste:
    2 tbs flour
    1/2 cup milk

    Cool completely.

    1/4 cup unsalted butter, softened
    1/2 cup crisco
    1/2 cup sugar
    1 tsp vanilla

  • In mixing bowl add butter & Crisco - beat 4 minutes
    on high with electric mixer. Add sugar - beat 4 minutes.
    Add the cool paste with 1 tsp vanilla, beat 4 minutes.

    Spread on cake and ENJOY.
