Cola Cake
This easy recipe for Cola Cake is Chocolate DELICIOUS. Cake made with a cola. . . sounds like it might be good? I know that is what you were thinking! But I promise, it is amazing. The secret to this moist scrumptious cake, marshmallows are in the batter! It is sooo good.
Perfect for a birthday party, an office lunch or a pot luck dinner. A winner every time.
CAKE:
2 cups cake flour
1 3/4 cup sugar
1/4 cup cocoa powder
1 tsp baking soda
1 tsp salt
1/4 tsp nutmeg
2 tsp vanilla
3 eggs
3/4 cup softened unsalted butter
1/2 cup milk + 1 tbs lemon
juice, for sour milk
1 cup cola
1 1/2 cups mini marshmallows
Preheat oven to 350 degrees. Grease a 13 x 9
inch metal baking pan, dust with flour.
Measure all ingredients in large mixing bowl,
except cola & marshmallows. Using electric mixer,
beat on low speed until well blended. Turn mixer to
medium for 1 minutes.
Add cola, blend on low speed 1 minutes. Stir in
marshmallows and spread batter in pan,
distributing marshmallow event. Bake 40-45 minutes.
Cool completely and frost with cola Icing.
COLA ICING
1/4 cup softened unsalted butter
3 tablspoons cocoa powder
2 cups powdered sugar
1 cup chopped pecans (optional)
Combine all ingredients, expect nuts. With electric
mixer, beat on low speed until smooth and creamy.
Add pecans and spread on cake.
