Chocolate Mayo Cake

This recipe is one of the best. The Chocolate Mayo Cake is moist, delicious and chocolaty good. If you love CHOCOLATE you are going to love this recipe.

Dry Ingredients, sift:
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 1/4 tsps baking soda
1/4 tsp baking powder

Wet Ingredients:
3 large eggs
1 2/3 cups sugar
1 tsp vanilla extract
1 cup reduced-calorie mayonnaise
1 1/3 cups cold water


  • Preheat oven to 350 degrees. Butter and flour
    two 9-inch cake pans. Line bottom with parchment
    paper. Measure and sift dry ingredients, set aside.
  • In a large mixing bowl, on high speed mix eggs,
    sugar and vanilla for 3 minutes or until fluffy. Reduce
    speed to low, blend in mayo. Using a wooden spoon,
    stir the flour mixture into the egg mixture 1/3 at a
    time, alternating with the water and beginning and
    ending with flour.
  • Divide batter between the pans. Bake for 30 minutes or until toothpick inserted in center comes out with moist crumbs. Cook cake in pans on a rack for 10 minutes. Turn out onto rack, peel off paper and let stand 10 more minutes.


  • Frosting:
    1 cup semisweet dark chocolate chips
    1/4 cup butter
    1/2 cup sour cream
    1 teaspoon vanilla
    1/4 tsp salt
    2 1/2 - 2 3/4 cups sifted powdered sugar

  • Melt chocolate with butter in top of double boiler
    over hot water. Remove from hot water; stir in sour
    cream, vanilla and salt. Slowly beat in powdered sugar
    until desired spreading consistency is reach. Makes
    enough frosting to frost a 2-layer cake or bundt cake.
