Chives

Chives are an amazing flavor enhancing herb and are the smallest member of the onion family. A favorite accompaniment to the baked potato and they are equally fantastic with mashed potatoes. They are wonderful with salads, in sauces and with casseroles and roasted vegetables.

Food for Thought:

  • The smallest member of the onion family and have hollow, tube like leaves that look like blades of grass. Very close to scallions and leeks, the slim leaves hold the plant's mild, onion like flavor. They are an herb that grows in clumps.
  • They are available year-round. When selecting, look for long, slender and vivid green stems that are free of browning and wilting.
  • Storage: Wrap in a paper towel and store in a zip lock plastic bag. They will be good in the refrigerator for up to a week.
  • When ready to use, rinse in cool water and gently pat dry, then snip into your favorite dish using a pair of kitchen shears. A teaspoon of these chopped greens provide a beautiful garnish to any dish from baked potatoes and fish to soups and salads.
