Chipotle Cornbread
This Chipotle Cornbread has a smoky flavor with a slightly sweet heat for a unique taste, very moist and delicious.
This recipe calls for sharp cheddar cheese which adds a wonderful cheesy mix to this fantastic cornbread.
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tsp baking soda
1 tsp salt
1 cup grated sharp cheddar cheese
1 cup buttermilk
3 large eggs
6 tbs unsalted butter, melted & cooled
3 chipotle chiles in adobo sauce, pureed and strained (about 1 tbs puree)
Preheat oven to 375 degrees. Butter a 8 inch square pan.
In a large bowl, whisk together cornmeal, flour, sugar, baking sodad, salt, baking powder and cheese.
In a medium bowl, whisk together buttermilk, eggs, butter and chipotle puree. Add the buttermilk mixture to the cornmeal mixture, stir until just combined.
Pour into prepared pan and bake 25 - 30 minutes or until toothpick comes out clean. Cool 10 minutes, cut and serve with butter.

Smoky, cheesy and ever so DELICIOUS.
