Cheesy Potato Casserole

This easy recipe for Cheesy Potato Casserole is full of wonderful flavors. Like similar recipes for this dish, you start with frozen southern style hash browns.

The new twist is adding more onions and pepper jack cheese which adds a little kick to this dish. It is fantastic and perfect for breakfast, brunch, a family or pot-luck dinner. Give it a try, it is simple and you will love it!



Hash Brown Casserole
with Pepper Jack Cheese


2 bags frozen hash browns,
Southern Style
1 stick unsalted butter
1 tsp salt
1 tsp pepper
1 can cream of chicken soup
2 cups low-fat sour cream
1/2 cup chopped sweet onions
1/2 cup chopped green onions
2-3 cups shredded Pepper Jack Cheese
13 x 9 glass baking dish


  • Pour hash browns into a large plastic mixing
    bowl, cover with plastic wrap, thaw potatoes.
    About 2 hours.
  • Preheat oven to 350 degrees. Grease baking dish.
  • In a small sauce pan, melt butter over low heat.
    While butter is melting, add to mixing bowl; soup,
    sour cream, onions and half of the cheese. Season
    with the salt and pepper, add melted butter. Mix well.
    Pour into baking dish.
  • Evenly spread remaining cheese on potatoes.
    Bake for 1 to 1 1/2 hours, until bubbly.
  • Serves 8.

    Variations: Substitute with your favorite cheddar cheese.
    Gouda is equally fantastic. Leave off top layer of cheese
    if you are not a big fan of cheese. Make it a meal -- add
    2 cups cubed cooked ham.
