Carne Asada Tacos

You will love these easy and flavorful carne asada tacos. The skirt steak is marinated with many herbs and spices that include oregano, chile powder, Pablano chilies and onions to name a few.



2 pound skirt steak

Marinade:
4 large cans diced Poblano chilies
2 Jalapeno peppers, seeded, finely chopped
4 cloves garlic, minced
6 green onions finely chopped, with greens
1/2 cup extra virgin olive oil
Juice of 1 lime
1 teaspoon sugar
1 teaspoon Mexican oregano
1 teaspoon cumin
1 teaspoon black pepper
1 teaspoon kosher salt
1 teaspoon chipotle chile powder

  • Combine all the marinade ingredients in a zip-lock bag. Cut the steak into 2 pieces, add to bag, seal and mix thoroughly. Refrigerate for 4 to 6 hours.

  • Preheat grill to medium high heat for 15 minutes. Take meat out of refrigerator, remove from marinade, cover with plastic warp and let rest at room temperature for 30 minutes before cooking. Grill each piece 6 minutes per side, for medium rare. Let rest 10 minutes, slice and serve with warm tortilla shells and condiments.

    Cojita Cheese
