Stove top or in the oven, either will work. I like the oven at a temperature of 250 - 325 degrees....using the oven allows for all-over even cooking. The key to success, go slowly.

Best cuts of meat include Chuck Roast, Briskets, Pork Shoulder and Ribs. Keep in mind there is little moisture in these cuts
of meat. Adding liquid keeps the meat moist and tender.
