Braising is a easy cooking technique that you will use again and
again and again. The reason---this process relies on low heat, time and moisture. So Simple!
Stove top or in the oven, either will work. I like the
oven at a temperature of 250 - 325 degrees....using the oven allows for all-over even cooking. The key to success, go slowly.
Best cuts of meat include Chuck Roast, Briskets, Pork Shoulder and Ribs. Keep in mind there is little moisture in these cuts of meat. Adding liquid keeps the meat moist and tender.

Cook's Note:Using a Dutch-oven works the best. You can use any heavy ovenproof cook pot, but the Dutch-oven is by far the winner!! I recommend you invest in a good quality product like Le Creuset, they are the best.
