Blue Cheese Coleslaw

This easy Blue Cheese Coleslaw recipe is sweet, yet a little tart from the Granny Smith Apples. The homemade dressing adds the sweet factor to this wonderful salad.

3 cups thinly sliced green cabbage
1 cup thinly sliced red cabbage
2/3 cup shredded carrots
1/2 cup diced green onions
3 Granny Smith Apples, thinly sliced or grated
2/3 cup blue cheese crumbles
1 cup coleslaw dressing(recipe to follow)
Salt & Pepper to taste

  • Mix all ingredients in a bowl and season with a little salt and pepper. You can use a prepackaged slaw mixture to save time, just don't forget the green onions and apples.

    Dressing:
    1 cup light or fat-free mayonnaise
    1 tbsp apple cider vinegar
    2 tsps sugar or honey
    1/4 tsp celery salt and white pepper

    Combine all ingredient. Add additional salt and pepper if needed. Pour over slaw mixture, mix well and refrigerate 30 minutes. Mix again. Serves 6.

    This recipe is refreshing and the flavors delightful.
