Blue Cheese Coleslaw
This easy Blue Cheese Coleslaw recipe is sweet, yet a little tart from the Granny Smith Apples. The homemade dressing
adds the sweet factor to this wonderful salad.
3 cups thinly sliced green cabbage
1 cup thinly sliced red cabbage
2/3 cup shredded carrots
1/2 cup diced green onions
3 Granny Smith Apples, thinly sliced or grated
2/3 cup blue cheese crumbles
1 cup coleslaw dressing(recipe to follow)
Salt & Pepper to taste
Mix all ingredients in a bowl and season
with a little salt and pepper. You can use a prepackaged
slaw mixture to save time, just don't forget the green onions
and apples.

Dressing:
1 cup light or fat-free mayonnaise
1 tbsp apple cider vinegar
2 tsps sugar or honey
1/4 tsp celery salt and white pepper
Combine all ingredient. Add additional salt and pepper if
needed. Pour over slaw mixture, mix well and refrigerate 30
minutes. Mix again. Serves 6.
