Beef and Peppers
This quick and easy recipe for Beef and Peppers with a spicy soy sauce is perfect with steamed rice.
It is a colorful dish with red and green peppers; an excellent choice when you need a tasty meal in a hurry.
1 pound boneless sirloin steak, cut into thin strips
2 tbsp soy sauce
1 tbsp red wine vinegar
2 tsp brown sugar
1/2 cup beef broth
1 tsp cornstarch
1 tbsp minced garlic
1 large red pepper, cut into strips
1 large green pepper, cut into strips
6 - 8 green onions, sliced
Salt & pepper
2 tbsp peanut oil
1 tbsp chili sauce
Slice steak, season with salt & pepper, rest 15 minutes at room temperature. In a small bowl combine soy sauce, red wine vinegar, brown sugar, beef broth, mix well. Add the cornstarch, whisk and set aside.
In a large saute pan, turn heat to medium-high, add peanut oil. When oil is hot, add steak, cook 3-4 minutes or until browned. Remove beef.
Return skilled to stove and saute peppers for 5 minutes, add green onions and garlic, cook until veggies are crisp-tender. Add the beef and sauce. Cook 3 minutes over medium heat, cook until sauce has thickened. Stir often. Add the chili sauce, mix well and serve over rice.
