Baked Pepper Fries

Everyone loves french fries, right? This easy recipe for Baked Pepper Fries is exceptional. The basil flavored olive oil and yukon gold potatoes are the key to success.

Using the microwave to speed up the process is another trick I like to use to cut down cook time in the oven. Because the potatoes are slightly warm, the olive oil absorbs into the potatoes for a fantastic flavor.

These are a wonderful to serve with any grilled burger, seared pork chop or any of your favorite meats, chicken or fish entrees.

Baked Pepper Fries with
Basil Olive Oil

6 - 8 Yukon Gold Potatoes
1 tbs pepper
2 tsp kosher salt
2 - 4 tbs basil olive oil
15 x 10 stoneware baking pan

  • Turn oven to 425 degrees. Place stoneware
baking pan in oven to heat the pan.
  • Wash potatoes. Cut in half, cut each half
in quarters. In batches microwave in a single
layer for 2 minutes. Place in bowl and drizzle
each batch with a little of the basil olive oil
  • Season with the salt & pepper. Carefully
fold the ingredients to coat potatoes with the
    oil and seasoning.
  • When the oven is ready, take pan out of oven
and slowly pour the potatoes on the hot pan.
With a spatula spread the potatoes evenly. The
potatoes will sizzle immediately, this is a
    good thing!
  • Set timer for 20 minutes. Remove potatoes,
set on hot pad. Stir & turn potatoes. Return
to oven and cook 15 minutes.
  • Serves 6.

You are going to love these, they are terrific.

These are wonderful to pan fry the next day and serve
with bacon and eggs. Great breakfast.
